Easy + Healthy Pasta Salad Recipe

On Sundays I meal prep and this healthy pasta salad is always one thing I make. Not only is it quick and easy, but my whole family loves it. It’s so nice to have something prepped and ready to throw in a to go container when I’m running out the door or my kids need a last minute snack.
With five kids, two adults, and three animals… a little organization goes a LONG way and I try my best to do certain things on Sundays to set up my week so everything flows as well as it can.

  • box of noodles (I love Banzo noodles)
  • pitted olives
  • cherry tomatoes
  • cucumbers
  • Greek dressing

  • boil a box of noodles per the directions on the box
  • pour cooked noodles into a bowl
  • add olives, tomatoes, and cucumbers
  • top with a jar of Greek dressing
  • add cheese if you’re not dairy free
  • mix and enjoy!

Save the graphic below for easy reference of the recipe to this delicious pasta salad. I love using fresh produce as much as possible and the addition of Primal Kitchen’s Greek dressing and Banza noodles make it even more magical!
I keep this is in a big glass bowl and everyone eats on it for the first half of the week.. it’s normally gone within a few days it’s so tasty!
