My “Go To” Lunch Right Now

Hey y’all! As you know, we have expanded our family by one more – sweet Vivi is here! We are loving on her 24/7 and that’s pretty much been my life since she joined us. Her and I have spent our days and nights lounging in bed so my body can heal after giving birth. Since I am recovering and breast feeding, it’s super important that I fuel my body with healthy and nutritious foods.
I have preached the importance of eating this way since my blog launched a few years ago and I swear that what we eat really does make a difference in how we feel and live. It’s not about “dieting” or being a certain weight it is realizing that our bodies are machines and our food is our fuel. Once you commit your thoughts to looking at food in this light, it will change your life forever.
Pretty soon, I’m going to dive deep into different ways to really amp up your foods for your body (think about healing autoimmune issues, gut issues, and eating for your blood type.) But for now, let’s discuss my go to lunch right now. There are three things I’m going to share with you that I make sure to eat daily and right now, I eat them all combined together.
A year ago, I found out that Daily Harvest expanded their product line from smoothies to making Harvest Bowls. I’ve always been a big fan of their smoothies so when I saw the Harvest Bowls, I scooped up several to try. Harvest Bowls are nourishing, savory foods for any time of day, ready in minutes with just one step. Daily Harvest has several different combos to choose from and they come shipped to your door, frozen and ready to be unthawed. My favorites right now are: cauliflower rice and pesto, broccoli and cheeze, and the spinach and shiitake grits. The way that I amp them up is by combining them with the following.
On a recent trip to Costco, I found these amazing organic brown rice and millet ramen noodles. As I was a poor college student, you best believe I lived on ramen noodles. Now that I know how toxic they are (click here to read more) I wouldn’t dare pick up a pack at the grocery store. So when I spotted this brand on an aisle at the store I couldn’t resist. I eat them at least 5 days a week for lunch, they are DELICIOUS and our kids love them too. Derrek has made a chicken stir fry and thrown some of these noodles in last minute to make the most amazing dinner for us that took less than ten minutes. For my lunches, I always simmer them on the stove in bone broth then mix with a Daily Harvest bowl.
Bone broth is life and here is why. There are so many amazing nutritional values to incorporating bone broth into your diet y’all! This is one staple that everyone should keep stocked in their house for daily cooking and for immunity boosting during cold and flu season. Bone broth is also my go to comfort food when I am sick and it’s the first thing I ate after I had Vivi. I sipped on warm bone broth while I was still fresh out of labor and it helped me get my energy back rather quickly. I love different brands of bone broth for different reasons and I mean, let’s be real… if you can make it that’s going to be the best form but for those of you that need it in a pinch head to Walmart’s freezer section and grab the Bonafide Provisions brand. It’s got all the goods for your health.
So to recap, my lunch combo is one Daily Harvest bowl, one pack of ramen noodles, 1/2 cup to 1 cup of bone broth with crackled pepper and Himalayan pink salt to taste. That’s it! SO easy, delicious and filling. If you want to try Daily Harvest for the first time, use code: LITTLESOUTHERNWIFE to get up to $40 off your first box!
