My “Go To” Lunch Right Now

Hey y’all! As you know, we have expanded our family by one more – sweet Vivi is here! We are loving on her 24/7 and that’s pretty much been my life since she joined us. Her and I have spent our days and nights lounging in bed so my body can heal after giving birth. Since I am recovering and breast feeding, it’s super important that I fuel my body with healthy and nutritious foods.

I have preached the importance of eating this way since my blog launched a few years ago and I swear that what we eat really does make a difference in how we feel and live. It’s not about “dieting” or being a certain weight it is realizing that our bodies are machines and our food is our fuel. Once you commit your thoughts to looking at food in this light, it will change your life forever.

Pretty soon, I’m going to dive deep into different ways to really amp up your foods for your body (think about healing autoimmune issues, gut issues, and eating for your blood type.) But for now, let’s discuss my go to lunch right now. There are three things I’m going to share with you that I make sure to eat daily and right now, I eat them all combined together.

A year ago, I found out that Daily Harvest expanded their product line from smoothies to making Harvest Bowls. On a recent trip to Costco, I found these amazing organic brown rice and millet ramen noodles. As I was a poor college student, you best believe I lived on ramen noodles. I eat them at least 5 days a week for lunch, they are DELICIOUS and our kids love them too. Derrek has made a chicken stir fry and thrown some of these noodles in last minute to make the most amazing dinner for us that took less than ten minutes. For my lunches, I always simmer them on the stove in bone broth then mix with a Daily Harvest bowl.
