GAMEDAY Dip with Vital Proteins

It’s officially the funnest Sunday Funday of the year! THE BIG GAME is always really fun – not because I necessarily even know what teams are playing, haha. I enjoy it for the halftime show (Hey J.T.) and the food! Dips and apps are some of my favorite things to indulge in and today is the day my wildest food dreams come true. It makes it even better that I am pregnant and finally able to enjoy food again.

We are choosing not going to a party this year to stay home and watch it with our family. Derrek and I tend to go into hermit crab mode sometimes but we’ve made a bigger effort lately to get out and about. With that being said, we’ve been around a lot of people lately and just wanna hang out with each other. This, leaves the food up to me and I’m excited for the challenge. After cooking our entire Thanksgiving dinner, I feel like I can handle any food challenge.

I am making an appetizer, pizzas and a fruit salad dessert for the adults and the kiddos. I have craved chili cheese lately (so odd, I’ve never craved it before in my entire life) so I’ll bust out a few simple ingredients and throw down in the kitchen. Vital Proteins plays a vital part (see what I did there?) in my food preparation this Sunday. I used their chicken bone broth Collagen to make the chili cheese dip and their Vanilla Collagen into the fruit salad dessert. I’ll throw the pizzas in the oven later after the kids help me assemble them. I’ve found out that they love, love, love helping in the kitchen so they will be really excited about making pizzas.

I take Vital Proteins Collagen every day and I do this because I’ve seen a huge difference in my body after doing so. The fruit dessert, I’ve made several times and is a huge hit with the entire family. You can read the recipe here. But it was my first time making the chili cheese dip so I am including that recipe here. This is my spin on an old fashioned unhealthy dip and I’m excited to give y’all my take on it so you can try it at your party or next event.

INGREDIENTS
-1 scoop of bone broth collagen
– 1 pound ground turkey
-1 teaspoon minced garlic
-1 tablespoon olive oil
-1 4.5oz can pinto beans, rinsed
-1 tablespoon chili powder
-1 teaspoon cumin
-1/2 teaspoon paprika
-1/2 tablespoon garlic powder
-1/8 teaspoon salt
-1 cup plain Greek yogurt
-2/3 cups cheddar cheese

RECIPE
– Preheat oven to 400 degrees
-place avocado oil in large frying pan and heat over medium heat
-add onion and minced garlic and saute until onions are translucent
-add ground turkey and cook for 5-8 minutes or until the meat is fully browned
-turn heat down to low/medium and add green chilies, tomato paste, pinto beans, spices and collagen. Mix and let cook 2-3 minutes.
-add greek yogurt and 1/3 cup cheese into the meat mixture and combine.
-transfer into a baking dish and sprinkle with the remaining cheese.
-bake for 15 minutes or until the dip begins to bubble.
-remove from oven and serve with veggies and chips!
