Buffalo Cauliflower Bites

Happpyyyyy Monday ya’ll! I am sure no one has a weekend hangover right? 😉 I hope that your favorite football team won the Super Bowl – if not, better luck next year! Today, I’m sharing a super simple recipe that has become one of my favorites to make! I am craving super spicy foods but not really loving meat during this phase of my pregnancy. I cook it because Derrek and the kids love it but I always end up eating more vegetables and coming up with vegetarian options for myself. Cauliflower has always been one of my favorite vegetables to eat – I can remember my Dad cooking it for me every weekend that I spent at his house. In the past year or so, Pinterest has helped revolutionize the way you can eat it and I’ve enjoyed trying all of the many options. I love making it into soups, alfredo sauces, mashed potatoes, rice and my all time favorite BUFFALO WINGS! Yea, I sub out my chicken wings for cauliflower and it satisfies my cravings!

You need THREE ingredients to make this happen but of course, I added a dipping sauce at the end because I love ranch and it helps the kids eat them if there’s a magical bowl of sauce to lick off at the end. Since, I live in the country I am not near Costco, Kroger or Target I’ve had to become really aware of what organic options I have at my local Walmart. I’ve talked to the supervisors and asked them to bring in certain products and they have worked with me so far. I really enjoy shopping at Walmart now because they have hands down the best prices and now that their selection of healtier foods has come around, its a win win for my body and my bank account.

I started seeing the Wild Oats Organic brand when I was there getting my weekly groceries and the first thing that I noticed was the price. Normally organic foods are really pricey- detouring many people from buying and eating healthier BUT this brand was made with a purpose to help give EVERYONE better food options and keep their prices lower. “Wild Oats still believes that everyone has a right to great-tasting, high-quality products that are affordable and easy to find without having to make an extra trip to a specialty store.” This really speaks to me because the number one thing I hear from people when they come to me about healthy eating is how expensive it can be. I hope you enjoy this simple and fairly inexpensive treat. I made these for a Super Bowl party and everyone gobbled them up (thank goodness I keep 2-3 heads of cauliflower in my fridge because I made another batch just for me and this baby in my belly, haha!

RECIPE

ingredients:
1 head of cauliflower
(cut into wing like pieces)
1 bottle of Wild Oats buffalo sauce
2 tablespoons of butter
1 teaspoon sea salt

dipping sauce:
1/2 cup of Wild Oats ranch
1 teaspoon Wild Oats garlic powder

instructions:
-cut the cauliflower into wing like pieces as big as you want them
-melt the butter and mix with the bottle of buffalo sauce
-add the butter, buffalo sauce, salt and cauliflower to a ziplock bag and coat well
-cook in the oven at 450 degrees until fork tender (about 20 minutes)
-mix the ranch and the garlic powder and set aside
-remove cauliflower from oven to cool slightly
-transfer to a serving dish and accompany with the ranch dipping sauce
-ENJOY
