Let me share a little secret with ya’ll! I like to cook as MUCH as possible but I’m not gonna lie, it gets tiring. Cooking three meals a day and figuring out snacks for the kids since they are out of school, I feel like I spend 90% of the day in the kitchen. Here’s how I used the Beet + Avocado bowl last week!
1 Daily Harvest Beet + Avocado Bowl
1 can organic chickpeas
2-3 tablespoons organic chicken broth
Pinch of salt
Cucumber (from my garden!)
Lettuce of choice
-Mix together Daily Harvest bowl, chickpeas, chicken broth and salt in a pan and sauté until warm.
-Add the pickled radishes and cucumber slices to the lettuce.
Top with the feta cheese
