Let me share a little secret with ya’ll! I like to cook as MUCH as possible but I’m not gonna lie, it gets tiring. Cooking three meals a day and figuring out snacks for the kids since they are out of school, I feel like I spend 90% of the day in the kitchen. For this reason, I love meal prepping and making lunches the easiest meal of the day. I normally make the kids little grazing plates with raw veggies, cut fruit, something to dip and a form of protein (sliced turkey, shredded chicken, or beans) and then I find something simple to make for myself.
Our garden is growing like crazy and I take full advantage of having one! I eat something out of our garden at least once a day. The lettuce is growing so well that salads are on constant rotation in our household. Just a salad doesn’t keep me full right now so I randomly grabbed a Daily Harvest Harvest Bowl out of the freezer and topped my salad one day. Ya’ll, it was SO good! I have eaten that combo since first trying it. Call it a pregnancy craving, but I call it a blessing to find a healthy, filling and easy to make lunch!
The Daily Harvest Harvest Bowls are shipped directly to your door, just like their famous premade smoothies. You can head to their website and easily customize your order, have it shipped to you and then enjoy a ready in minutes meal. There are options to have them shipped weekly or monthly with NO commitment to auto order your shipments. Anything that keeps me from making a trip to the grocery store really makes me happy and life so much easier. Have you ever taken four kids to the grocery store? I mean, taking even one or two is an adventure and I am sure you feel my pain, ha!
My current favorite Harvest Bowls that I eat over a salad or cooked quinoa are: Spinach + Shiitake Grits, Sweet Potato + Wild Rice Hash, and Cauliflower Rice + Kimchi Harvest Bowl.
Here’s how I used the Beet + Avocado bowl last week!
1 Daily Harvest Beet + Avocado Bowl
1 can organic chickpeas
2-3 tablespoons organic chicken broth
Pinch of salt
Cucumber (from my garden!)
Lettuce of choice
-Mix together Daily Harvest bowl, chickpeas, chicken broth and salt in a pan and sauté until warm.
-Add the pickled radishes and cucumber slices to the lettuce.
Top with the feta cheese
Regardless if you need something to eat that’s quick or looking for something with a lot of nutritional value, Daily Harvest smoothies and Harvest Bowls should be on your list!
