Frozen Blueberry Snacks

Today I am sharing one of our favorite snacks (mine and the kids). It’s really important when you have littles to make them healthy options to grab because if not they head straight towards the junk. I do a pretty good job of keeping our pantry and fridge junk free but when they go to their grand parents house it’s a wonderland of candy bars and sodas… which I complain about and finally had to start sending healthy options with them. Now that the kids are a little older, especially Nolan, I try and get them to help me cook whenever they can. It’s so much easier letting them help with making our food than trying to keep them from tearing the house down while I go to the kitchen by myself. Nolan always gets the eggs and starts cracking them for our breakfast, helps make sandwiches and wraps and even likes to stir my marinades when I cook meat for supper. Two snacks that my kids LOVE are Elli Quark German cheese and berries so I figured I could kill two birds with one stone and make a really fun sweet treat for them. They think this is like a special candy and it’s so easy and super healthy for them.
Elli Quark reached out to me about a month ago and asked if I would try their spoonable fresh cheese that has a creamy texture like Greek yogurt. After I did a little research I found out that quark cheese has a richer, less sour taste than Greek yogurt and higher protein-to-carb ratio than Greek yogurt, and NO ADDED SUGARS or artificial sweeteners. This really enticed me to try their brand. Now that we’ve used them we have fallen in love with the flavor and prefer it to Greek yogurt. You cannot beat super healthy and a better taste when it comes to food – in my book! We enjoy all of their flavors and eat them alone for snacks, I’ve added them to smoothies and oatmeal and enjoyed them both ways! The plain Elli Quark yogurt is a perfect replacement for sour cream and I really like to eat it as a healthier substitute.
For this recipe, all you need are berries (of your choice), Elli Quark cheese (flavor of your choice) and wax paper! It could not be more simple than that ya’ll! I really hope you try this recipe and see for yourself how delicious this is. I love this snack for post workouts and when I am craving a sweet treat at night time!
RECIPE
ingredients:
berries (we used one container of blue berries)
1 container of Elli Quark cheese (we used mint chocolate)
1 tablespoon lemon juice
Line a baking sheet with wax paper.
Mix the lemon juice into the Elli Quark. Add the blueberries to a bowl and then add the Elli Quark. Toss well to coat.
Place the blueberries on the prepared baking sheet in a single layer.
Freeze 1 hour or until frozen. Store in a freezer-safe container for up to 1 month.
