Avocado Cookies FTW
Ya’ll, we’ve got a little obsession… okay, okay… a BIG obsession and it’s these amazing cookies. I swear I can’t make them fast enough before they all disappear. The kids ask me every day if we can make cookies and at this point in my pregnancy, I happily oblige. Not only are they flipping delicious but super easy to make. You just throw everything in the blender and press a button. BOOM! #momwin I also celebrate the small victories and these babies are definitely on that list.
Let me just take a moment to explain another #momwin… they are HEALTHY! Say what? Yeah, ya’ll… they are made with avocados and other simple ingredients. Avocados are very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals. They contain more potassium than bananas, loaded with fiber, are full of heart healthy fatty acids, can lower cholesterol and triglyceride levels, and contain antioxidants that can help your eye sight. Honestly, I could keep going with the nutritional benefits but ya’ll catch my drift.
Ingredients:
1 ripe avocado
1/4 cup maple syrup
1/2 cup nut butter
1 egg or chia egg if vegan
1/2 cup unsweetened cocoa powder (I used Vital Proteins cocoa protein powder)
optional: chocolate chips
Recipe:
1. preheat oven to 360F
2. cover a baking sheet with parchment paper
3. in blender, add avocado and blend until smooth
4. add in egg, nut butter and cococa powder, blend until no lumps
5. take a spoon and scoop spoonfuls onto parchment paper into a cookie shapes
6. bake 10-12 minutes until your cookie liking
