
Garlic Beef Rotini (Kid-Friendly + High Protein)
Y’all… this is one of those “what’s in the fridge?” meals that turned into a 10/10 family favorite. It’s fast, filling, and full of flavor. The best part? It’s healthy without trying too hard.
We used chickpea pasta for extra protein and fiber, grass-fed beef, and added a dollop of plain Greek yogurt for creamy balance to the chili oil heat. Even the kids were asking for seconds!
What You Need:
- 1 lb rotini (we use chickpea pasta)
- 1 lb ground beef
- 1–2 tbsp minced garlic
- 1 small onion, chopped
- 1–2 tbsp chili pepper oil (adjust to taste)
- Salt + pepper to taste
- Optional: Italian herbs, red pepper flakes, green onions
- Plain Greek yogurt (for serving)
How to Make It:
- Boil pasta in salted water until al dente. Save ½ cup of pasta water and drain.
- Brown the beef in a skillet. Once almost done, push it to the side and sauté onion until soft. Stir in garlic and cook another minute.
- Add chili oil, salt + pepper, and combine everything.
- Toss with the pasta and a splash of the reserved water for a saucy texture.
- Serve with a big dollop of Greek yogurt on top. Optional: garnish with green onions or herbs.
Kid Tip:
If you’re cooking for littles, pull out a portion before adding the chili oil. You can also cool their bowls down with extra yogurt or shredded cheese… works every time.
