Oh my werdddd ya’ll, I can’t believe we are in the last week of September. This year is FLYING by and I wish I could make it slow down. I have truly felt like this year has gone by quicker than the rest. Maybe it’s because so many wonderful things have happened for our family this year. Don’t get me wrong, we’ve had our lows as well but I try to stay positive and I’m grateful for all the goodness. I really want to get back on track with my blog and post more recipes. I’m not gonna lie with the fact that I’ve majorly slacked off in that area. I am breastfeeding so, it’s extremely important to eat all of my meals and some snacks as well.
Lunch time is the time where I do feel most slack about my meal choices. I am trying so hard to get back into a groove and this is the way I’ve found easiest. On Sundays I meal prep and that includes boiling a dozen eggs. Not only do all the kids love boiled eggs but I do as well. I’ve been using mine to make an easy egg salad to scarf down at lunch. It is SO good and easy to make. I hope you incorporate it into your lunch time routine and enjoy the mouth explosion of goodness.
-2 boiled eggs (mashed)
-1/2 of an avocado (mashed)
-2 tablespoons of mayonnaise
-salt and pepper to taste
-1 teaspoon onion powder
1. combine all ingredients and enjoy!
